Avocado-Lime Mousse

Avocados are loaded with good fat and low on sugars and carbs making them a great food for any time of day. Limes are also a very low-glycemic fruit with virtually no sugar. This recipe combines the two with a bit of enzyme-rich unheated honey to make a delicious treat that can be eaten before 2pm, or after. (Note: if you have a sweet tooth and add sweeteners beyond what the recipe lists, consume only after 2pm). 

  • 4-5 avocados (about 2 cups worth)
  • 5 large limes for fresh squeezed lime juice
  • ½ cup raw unheated honey/maple syrup

Juice limes and peel and de-pitt avocados. Place lime juice, your chosen sweetener and avocados in Vitamix mixer (or food processer) and blend until smooth. Serve immediately.

This will keep in the refrigerator for 5-7 days but I recommend to bring to room temperature before serving for best flavor (cold temperatures reduce the tongue’s ability to taste sweetness, so when this is served chilled it can taste more sour than at room temperature).

Note: Pure raw unheated honey can be difficult to find. Most “raw honeys” are heated during the extraction process which destroys the enzymes that are so beneficial in truly unheated honey. Look for “raw unheated” on the label, it will usually be 50% more in price than other “raw honeys” and will have a creamy, sometimes crystallized look – it will NOT be transparent.
